Fav food of the week shoutout. . . .

I am in general not a seafood person. My biggest complaint is the "fishy" smell. However there are a few that I will dig into. One being salmon. I honestly cannot get enough of it. Now I am talking about fresh salmon and not farm-raised. There have been concerns regarding chemical additives that could be harmful to you. That being said I thought tonight I would splurge for my hubby and I.

I start off with a fresh filet. Tonight I decided to blacken mine and cook it on the stove in a little bit of Extra Virgin Olive Oil. Another good way is just to use butter and lemon with a little bit of garlic and bake in the oven. Those of you that have cooked salmon know that it does not take long. Just a few minutes on each side under medium heat will do the trick.

Tonight I decided to serve it with some alfredo noodles and spring veggies in a herb and butter sauce. Who said food that was good for you had to taste bad?

Blackened salmon is my hubby's FAVORITE. We go to a steakhouse and he gets that while I get a medium rare ribeye. LOL Another of his favorite salmon recipes is to cook it with mustard spread on top. Just plain ol' French's yellow mustard. Interesting taste - we both like it.
